When I switched to a modified paleo diet about a year ago, I wasn’t sure where to start. I read everything I could find on the internet and basically came up with recipes I wanted to try. I tried to plan out my menu a week in advance to go grocery shopping and make sure I had everything I needed.
In the beginning, I was only purchasing exactly what I needed for my weekly recipes. But what happens when you miscalculate your portion planning and run out of your dinners before the week is over? I couldn’t just open the cabinet and bake something or throw some pasta on the stove. About the only thing in my pantry that I could eat in a pinch were nuts…and that gets boring after a while. I don’t like to pay full price for anything. I dabbled with extreme couponing a few years ago…but that takes a serious amount of time and effort. I also don’t trust a lot of those online money-making schemes since they’re usually too good to be true.

I follow a modified paleo diet most of the time, and people like to ask me what I eat. I generally cook on the weekends and eat the same meals every day for a work week. I found myself in an interesting position this summer. I used to have lots of clothes, but only wore about 30% of what I owned. But this year, I’d lost 50 pounds and found myself able to wear everything in my closet. I had a ton of clothes and I wore them all…which was great because I could go weeks without doing laundry…but the amount of clothes I owned was overwhelming.
